About how to convince smartphone to use VPN for email receiving/sending

Are you connecting via IMAP? If so, you can configure the mail client and tell it that your Exchange server lives on the "Corporate Network" (itīs a setting in one of the spinners in the wizard). Then it will automatically know to use the VPN server to connect.
